RADICCHIO AND MOZZARELLA PANINI

INGREDIENTS

  • 1/2 c. extra virgin olive oil
  • 1 T. minced garlic
  • Salt and pepper
  • 1 head radicchio
  • 4 thick slices Italian bread
  • 8 oz. fresh mozzarella, cut into 1/4-inch thick slices

PREPARATION

In a small bowl, mix together the olive oil, garlic, salt and pepper.

Cut the radicchio into quarters, wash and pat dry and toss in a baking dish with half the olive oil. Bake in a preheated 375-degree oven for 12-15 minutes until the radicchio is tender but firm to the touch. Do not overcook. Preheat a panini grill or flat iron sandwich grill. Arrange the radicchio and mozzarella on two slices of bread. Top with the remaining two slices. Brush with the remaining olive oil. Spray the grill with olive oil and grill the sandwiches, 3 to 4 minutes, until bread is lightly golden and cheese is melted. Cut and serve immediately.

Makes 2 sandwiches.
